This is one of my absolute favourite fish dishes – the flavour of the spicy chorizo goes surprisingly well with firm white fish and the calories are pretty low too at around 250 per serving.

When your picnic or buffet quiche contains pastry and cream and oodles of cheese, it’s a very high calorie, high fat food – here I’ve reduced the calorie content enormously by using a mini tortilla wrap in place of the pastry and crammed it full of good things!
