Basic Rich Tomato Sauce

My simple Basic Rich Tomato Sauce recipe is only around 28 calories for 2 tablespoonfuls. So easy to cook, this versatile sauce can be used in so many ways and freezes really well – try stirring some into freshly cooked pasta, turn it into a classic Bolognese or lasagne, or use a few spoonfuls to spread on a pizza base.

Now, I wouldn’t consider this to be an authentic Italian recipe! I am neither Italian nor a chef, and the ingredients of “the perfect tomato sauce” will always be up for debate and the recipe varies considerably! Google “authentic Italian tomato sauce recipe” and see for yourself!

What I have created is a dead simple, healthy and versatile sauce that can be used in any number of ways and doesn’t involve any complicated ingredients or cooking methods.

Ingredients
  • 1 tsp Olive oil
  • ½ medium Red onion (peeled and very finely chopped)
  • 4 Cloves garlic (peeled and crushed or grated)
  • 2 400g Cans chopped tomatoes in juice (use the best you can afford - they will be richer and less acidic)
  • 1 tsp Sugar
  • 1 tsp Red wine vinegar
  • 1 handful Fresh basil leaves (chopped or shredded, or use 1 tsp of dried instead)
  • 1 pinch Dried oregano
  • Black pepper (to taste)
Instructions
  1. Heat the oil in a large saucepan and add the onions.  Cook them slowly over a low heat for 5 minutes, stirring frequently, until they have started to soften. Don't allow them to brown.

  2. Add the garlic and cook, stirring, for a couple of minutes.

  3. Add the tomatoes, sugar and red wine vinegar, and stir to combine. Bring the pan to the boil, then reduce the heat. Simmer very gently for around 30-40 minutes until slightly thickened, stirring to ensure it doesn't stick to the bottom of the pan.

  4. Add the herbs around 5 minutes before the end of cooking - if you add them at the start, the basil can become bitter. Season with black pepper to taste.

If freezing, allow the sauce to completely cool before dividing into freezable containers, and defrost thoroughly before using.
